Perrier comes from the Les Bouillens spring at Vergèze in southern France, where the water and its natural gas rise separately before being recombined at bottling. The result is the firm, fine bubble the brand has been known for since the late nineteenth century. It is bottled at source in Gard.

At 475 mg/L Perrier sits at the upper edge of the medium band, with a low pH of 5.5 driven by its carbonation. The combination gives a crisp, assertive mineral character and a sharp finish rather than a soft one. It cuts through fried food, salt and citrus, and works well as an aperitif water.
