Water is the first thing set on the table and the last thing cleared, and almost everywhere it is treated as an afterthought: poured by default, chosen without thought, noticed only when it runs out.
A considered bottle changes that. Before a course arrives or a meeting is called to order, the water has already set a standard. It reads as attention to detail, as respect for the guest, as care that carries through to everything else in the room. A client dinner, a tasting menu, a boardroom, a hotel suite: in each, the water on the table says something before anyone has spoken.
We arrived at this through the work itself, over years in food, distribution and hospitality, and out of a plain objection to premium water being handled as a commodity. The premise is simple: like wine, water carries where it comes from. Where it rises, what it passes through and how it is bottled produce real, tasted differences. Curating those differences and presenting them as a single, considered index is the whole of what we do.

On the table
In a professional setting the choice is never neutral. A bottle of Tŷ Nant on a conference table, Acqua Panna poured through a Michelin-starred tasting menu, Perrier served at a rooftop event: each one either reinforces the standard of the room or quietly works against it.
For a hospitality director, an event planner or a buyer stocking a floor, that is the purpose of the edit: a short, deliberate range chosen so that whichever bottle reaches the table belongs there. We hold it in glass and in the formats each source has always used, so the decision is settled well before service begins.
How each bottle earns its place
Nothing is listed because it happens to be available. Every water on this site has been through the same review, carried out by hand before it goes up, and we look for the same things each time, in the same order.
The source
Each water traces to a single named spring or mineral-water house, and we confirm that origin before it is listed. We do not carry blends, purified municipal water sold as spring water, or any label whose source we cannot stand behind.
Mineral character
We read the water's own mineral analysis — its total dissolved solids and its calcium, magnesium and bicarbonate — and choose for distinction rather than sameness. A water earns its place because it tastes of somewhere, not because the name is familiar.
The house behind it
We favour established springs and family houses with a long record of bottling their own water, over labels assembled for a shelf. Continuity and provenance count for more than a campaign.
The vessel
We consider how each water is bottled and prefer glass where the house bottles in glass. Where a source has always used another format, we keep it rather than impose a single standard that does not belong.
How it is described
We list only the genuine product, sourced through legitimate channels, and describe each bottle by its real size, container and origin. When we find an error in a title, an image or a specification, we correct it.
What survives this is a single, deliberate index rather than a catalogue. It is shorter than it could be, and that is the point.
