How each bottle earns its place.

Nothing is listed because it happens to be available. Every water passes the same review, carried out by hand and in the same order, before it earns a place in the index.

Character, not popularity.

We choose for distinction: total dissolved solids, mineral profile, the taste of somewhere, rather than for a familiar name. A water earns its place because it tastes of where it comes from, not because you have heard of it.

A real spring, not a tap.

Every water traces to a single named spring or mineral-water house, confirmed before it is listed. No blends, and no municipal water dressed up as spring water; only sources we can stand behind.

The right vessel for the source.

We prefer glass where the house bottles in glass, and keep the formats each source has always used rather than imposing one standard. How a water is held is part of how it is served.
